Equipment:

Flat Top – Clean surface, empty grease trap, wipe sides

Steam table – Wipe out inside, clear debris from filter, wipe shelf under and around

Salamander – change tinfoil, wipe inside and out

Sink – wipe inside and out, shelf underneath
